  1. Soak the kombu in the water 20 minutes, then heat gently and remove just before boiling.
  2. Add the bonito flakes, simmer 1 minute, then strain to make a clear dashi.
  3. Lower the heat and whisk the miso into a ladle of warm dashi, then stir it back in. Do not boil.
  4. Add the tofu and wakame and warm through for 2 minutes.
  5. Serve at once scattered with spring onions.

Instructions

  3. Add the beef, separating the slices, and simmer 5 to 7 minutes until just cooked.
  4. Skim any foam and let the flavors meld 2 more minutes.
  5. Spoon the beef, onions, and broth over bowls of hot rice and garnish.
